My love of the pressure cooker grows more and more every day. This recipe is one that I usually make on the grill in a foil packet, but it was raining and my broccoli needed to be cooked, so I decided to give the pressure cooker a try. if you try the grill method add olive oil to the foil before the broccoli and toss the broccoli in a little oil to prevent sticking.

I’ve decided that pressure cooker steam broccoli is the way to go and that I will be using it for all of my steamed broccoli recipes in the future. It’s the perfect texture and such a beautiful bright green color.

Life can’t get much easier with a pressure cooker, and this broccoli couldn’t be any more delicious.

Ingredients:

  • 1 bag of chopped and washed broccoli florets
  • 1 cup of water
  • lemon wedges
  • shredded Parmesan Cheese
  • red pepper flakes
  • salt

Directions:

Fill the pressure cooker up with water and add a metal steamer basket.  Dump in half of the broccoli and sprinkle with salt, add the rest of the broccoli and then sprinkle salt over the top.

Close the pressure cooker and set for high pressure (70 pounds) turn on the steam button and select 2 minutes.  When the cycle is finished do a quick release and turn off the power.

Carefully remove the broccoli to a bowl and immediately sprinkle 1/4 – 1/2 tsp. of red pepper flakes and shredded Parmesan cheese over the top.  Squeeze a little lemon juice over it and serve lemon wedges on the side for individual additions at the table.
