Years ago I ate a refreshing summer salad at a local pizza restaurant. We have long since moved away, but the salad is one that I love to recreate during the summer when watermelon is in season.

The salad was served with a balsamic vinaigrette, but any light salad dressing would be excellent on top. I like it with strawberry vinaigrette, lemon poppy seed, or my lemon vinaigrette.

I prefer to use goat cheese in the salad, but the day that I made it, we were out so I subbed out mozzarella cheese. I think the salad is better with a mild cheese.

Ingredients:

  • 1 container of baby spinach or mixed greens
  • 1 small seedless watermelon, diced
  • 1 container of blueberries
  • candied pecans
  • goat cheese or a mild cheese
  • salad dressing of your choice

Directions:

Wash and prep all vegetables.  Dice the watermelon into bite sized pieces.

Layer the spinach or mixed field greens with the blueberries, watermelon, candied pecans, and cheese.

Drizzle a mild vinaigrette over the salad.
