I’m a Taco Bell fan. I like Mexican food even if it’s from a fast food chain, but I only order a few select menu items. The Beef Meximelt was one of my go to menu items, but recently like many other fast food restaurants, Taco Bell streamlined its menu and did away with the Beef Meximelt.

I decided that rather than going without the tasty flour tortillas that are loaded with melted cheese, seasoned beef, and pico de gallo, that I would recreate them at home.

This is my version of Taco Bell’s Beef Meximelt. I never worked there, I just enjoyed ordering them often, if we’re being for real, probably too often. For me one thing that I do differently is that I lightly brown the tortilla in a skillet after I melt the cheese in the microwave. You can skip the last step and enjoy them straight from the microwave if you prefer.

This is an easy meal to recreate at home since Taco Bell sells many branded items in the Latin foods section of my local grocery stores, but if you can’t find their exact items, then use your favorite taco seasoning.

Ingredients:

  • 1 package of taco size flour tortillas
  • 1 package of shredded Monterrey Jack Cheese
  • 1 pound of ground beef
  • 1 package of Taco Bell taco seasoning
  • 1 container of Pico de Gallo (or homemade)
  • green onions, diced
  • optional – cilantro

Directions:

Cook the ground beef in a nonstick skillet over medium heat.  Drain any extra fat if you don’t use lean ground beef.  Follow the directions on the package for the taco seasoning.  Once the meat is ready, assemble the meximelt.

Add a layer of beef down one half of the flour tortilla, spoon a little pico de gallo on top of the beef (drain it first if using store bought) and sprinkle a few green onions, cilantro (optional) and the shredded cheese over the top.

Fold the tortilla in half and microwave the meximlets (2 at a time) on a microwave safe plate for about a minute or until the cheese is melted.

Optionally, I lightly toast my tortilla in a nonstick skillet after I microwave it, but they’re not toasted at Taco Bell.
