I love homemade guacamole. Its flavor is unlike anything in the world. It’s a perfect addition to not only Mexican meals, but is also delicious on sandwiches and of course as a topping for tortilla and pita chips.

I started making guacamole at home years ago, but I always made a smooth guacamole until we visited a local Tex-Mex restaurant and ordered the table side appetizer.

They made a chunky version that was loaded with extras like lime juice, diced tomatoes, onions, jalapenos, and cilantro. They allowed you to choose your additions and of course I said load it up! One bite of the Chunky Guacamole and I was hooked, but since I couldn’t live at the restaurant as their kitchen mouse like Remy in Ratatouille, I started making it at home.

A helpful hint is to use a pie plate or a large dinner plate with high sides so that you have enough surface to smash one of the avocados. Dice the other avocado up and gently fold it in so that you don’t wind up with a smooth guacamole.

Also, save some of your lime juice to squeeze over the top of the guacamole if you plan to make it ahead of time and put a piece of plastic wrap directly on top of it to help to prevent browning from oxidation. I like to save a little of the additional items as a pretty topping if I’m serving it for a gathering. I sprinkle them across the top rather than mixing everything in.

Ingredients:

  • 2 avocados, washed and dried
  • 1 Roma tomato diced
  • 1/4 of a purple onion, diced
  • 1/4 cup of chopped cilantro
  • 1 jalapeno pepper diced
  • juice of 1/2 of a lime
  • salt and pepper
  • dried cumin – 1/2 – 1 tsp.

Directions:

In a large plate or pie pan smash up the inside of one avocado.  Dice the other avocado and add it to the thoroughly mashed avocado.  Gently fold it in.

Save some of the following items to top the chunky guacamole.

Sprinkle the tomatoes, jalapeno, cilantro, onions, lime juice, salt, pepper, and cumin powder over the surface of the guacamole and mix them gently into the guacamole.  Taste for seasoning and adjust the salt and pepper as needed.

Spoon the guacamole into a bowl, and squeeze a little more lime juice over the top.  Sprinkle the reserved toppings over the surface of the chunky guacamole for decoration.

Serve immediately or refrigerate.  If refrigerating press a piece of plastic wrap directly to the surface to help to prevent browning.
