Okay so not all of the recipes that I try to recreate at home are exact or very easy, but they usually taste good and were worth the try. This one almost broke me.
I needed ground chicken, but I can’t buy that at my local grocery store. So, I jumped down the rabbit hole also known as Pinterest and found the directions for making your own ground chicken in a food processor. Insert hand to the forehead now because I spent more time disinfecting my kitchen counters and cleaning raw ground chicken from my food processor and kitchen surfaces than I did cooking said ground chicken. NEVER AGAIN! I honestly could’ve converted to vegan that night. Bleck! But on that note if you are vegetarian try this using tofu instead of meat.
That being said, if you can’t buy ground chicken but like trying new things such as becoming a butcher for the day then go for it. Otherwise dice the chicken breasts up into a tiny dice and leave the food processor in your cabinet. The flavors are great and I will definitely make this recipe again but I’ve decided that I know my limits and Kroger grocery store cashier and butcher are two of them so diced chicken it will be until I can buy ground chicken from a store.
In a nonstick skillet heat a Tbsp. of oil and add chicken, garlic, red pepper flakes, (fresh ginger if using) and white onion and cook until the chicken is browned, about 4-5 minutes. Stir in finely chopped water chestnuts, green onions, and all of the sauces, vinegar, and spices and cook for a couple of minutes more until the mixture is warmed through. Serve in freshly washed and dried lettuce leaves (iceberg, and romaine work well because they’re sturdy but choose your favorite).
