One of the classic flavor combinations of school lunch in my area of the world would definitely be this Peanut Butter and Honey Sandwiches. Our lunch ladies served them with Vegetable Beef Soup and although to some it may seem like an unlikely pair, it’s serious deliciousness in my book.
Many schools have removed Peanut Butter and Honey Sandwiches from their lunch menu due to allergies, but you can still enjoy the classic flavor from the comfort of your home.
This mixture of creamy peanut butter, honey, and butter is smooth and thin. It can make for a messy sandwich, so don’t overfill the center of your bread. I save the leftover filling, if I have any, in the refrigerator. It thickens up as it chills, but 5 – 10 second increments in the microwave allow it to spread smoothly again.
My favorite way to serve Peanut Butter and Honey Sandwiches is on old fashioned white bread since it reminds me of the sandwiches my school cafeteria served, but wheat bread is delicious too and what I used for the photos. Make sure your butter is soft but not melted. Mix all of the ingredients together in a bowl until smooth. Spread the mixture on sliced bread to make a sandwich. Note – it’s thin so don’t spread too much or it will make for a messy meal.
Refrigerate leftover spread if there is any. Warm for 5 to 10 seconds until able to spread easily without being too runny.
