This was such an easy salad to make since I started it off by using beets that I had cooked in my pressure cooker. The instructions can be found by clicking here on my pressure cooker beets recipe. If you don’t have a pressure cooker you can boil or roast the beets or buy precooked beets in a can or in sometimes they can even be found in the refrigerated salad section of your grocery store.
Salads not only make great main dishes, but they also make great appetizers. For this one, I didn’t have mint, or basil, but fresh herbs would be a great addition.
I love the flavors of salty and sweet so I chose to use Cotija Cheese, which is a Mexican cheese that’s dry and a little salty. If you can’t find it in your local dairy section, use Feta instead or even grated Parmesan. Not a fan of salty and sweet? Try goat cheese or Brie instead.

Wash and prep the oranges by peeling them and cutting them into segments that don’t have any skin. You can use 2-3 cans of Mandarin oranges for a faster salad.
Drain the beets well.
Arrange the beets and oranges on a serving dish and sprinkle with the shredded cheese or place bite sized pieces of a harder cheese around the dish.
Refrigerate until ready to serve or serve immediately.
