What a weird year this will be for celebrating Mother’s Day. For many, social distancing means no family gatherings to celebrate mom. Thank goodness for technology and the ability to be able to see each other through our smart phones and computers.

Even if you can’t give your mom a hug and spend the day with her, you could still drop off a special treat for her like these awesome cupcakes decorated with my homemade Buttercream Frosting or Cream Cheese Frosting. Once again, I start with boxed cake mix, but I often add almond, coconut, or lemon extract to add to the flavor. If you prefer to use store bought frosting rather than make your own, buy extra since decorated cupcakes use quite a bit of frosting.

Here’s a helpful suggestion for delivery of your gift. Please put the car in park and drop off your gift nicely rather than throwing it towards the house from your moving car.

I saw a video of a lady on the internet delivering her sister’s birthday gift at a slow roll, it was thrown from her half rolled down car window. At least the gift bag made it to the lawn. It made me laugh, but if you decide to make these amazing cupcakes please don’t throw them as part of your Corona Virus safety measures!

Happy Mother’s Day to all of the moms in my life and thanks to my two nuggets for making me a mom.

Ingredients:

  • Cupcake Liners
  • Store bought cake mix of your choice and the ingredients to make the cake – eggs, oil or butter, water
  • Buttercream Frosting or Cream Cheese Frosting
  • Food Coloring – I used Wilton Gel colors – pink and green
  • Decorator Piping Bags
  • Decorator Tips – Russian Tips & Leaf tips

Directions:

Bake your cupcakes according to the manufacturer’s directions for the cake mix that you purchase, or use your favorite homemade cake recipe.

Allow the cupcakes to cool. While the cupcakes are baking mix up the frosting, or use store bought frosting. I use gel food coloring to tint my frosting, and store it in plastic containers with a cover until I’m ready to use it.

Note**Decorative accents require quite a bit of frosting. I usually make a double batch of frosting so that I have plenty, and freeze any leftovers.

Once the cupcakes are cooled fill the decorator bags with frosting. First spread a thin base layer of frosting across the top of the cupcakes with an offset spatula. Next, decorate the tops of your cupcakes with the floral tip and then fill in the gaps with the green leaves using a leaf tip.

For multi colored flower fill a piece of plastic wrap with two layers of different colored frosting. Roll it up and place it into the decorator piping bag and then trip the end off and pipe as normal. Or fill two smaller bags, that are trimmed on the ends, with icing and place them into a larger bag that has the required decorator tip and start decorating.
